The book is divided into two parts : part I, ' Nutrition in health' and part II, ' Nutrition in disease'. Basic physiology and biochemical factors are discussed as they apply to body requirements, food substances and their utilization. There are many valuable tables. Such topics as the low-sodium regimen and the rice diet for the treatment of hypertension and management of malnutrition have been well discussed. New material such as the new system of dietary equivalents in diabetic diets adopted by the American Diabetes Association has been incorporated.
